CHOOSING SPICES
If you don't have a recipe to follow, before you add any herbs or spices, smell all the ones you think you might want to include. Think outside the box and smell some you wouldn't normally include, e.g., thyme in an Indian curry. Eliminate some, re-smell, and then add some of each to the

. And remember that you can always add more, but you can never take any out.
